Crust:
2 1/4 t. yeast 1/2 t. sugar 1 1/2 c. warm water
1 t. salt 2 T. olive oil 3 1/3 c. flour
1/2 t. each garlic powder and italian seasoning.
1 1/2 -2. T. gluten (opt. -just helps the dough to raise better)
Dissolve yeast and sugar in water and let sit for 5 min.
mix with rest. Knead for approx. 10 min. Place dough in oiled pan and let raise until double. punch down and let relax for 5 min. Or skip these steps and dump this in your bread machine and press "dough" cycle! My favorite!
Roll out approx. the size of a large cookie sheet. (I use a roul'pat. An awesome rubber mat that lets you roll out ANY dough without using more flour and NOTHING sticks to it. Leave a comment if you want info about how to get one, my sister-in-law works for the company.) Place on greased(Pam) cookie sheet and press it down in the corners so it will stay.
Sauce
1 lg can (28 oz.) diced tomatoes, mostly drained 1 t. sugar
1/2-3/4 c. diced onions 1/2 t. salt
1 1/2 T. olive oil
Heat olive oil and cook onions until carmelized. Add tomatoes, sugar and salt. Stir gently to combine. Spread over pizza dough.
Top with as much mozzarella cheese as you can get away with and any other toppings. We tried pepperoni, ham and pineapple. We loved the fresh flavor of this sauce.
Bake at 460 for approx. 15-20 min. until golden brown. (I freaked out about cooking anything that high, but it actually worked!)

I want more info on that roll out thingy--we make pizza once a week and other stuff that requires rolling all the time! It looks delicious! Have you tried it with whole wheat?
